Eventually you have to do multiples (21 red, 18 orange, etc.), but you don't have to do them all at once.  Once a color is unlocked, you can do those.  Some folks do all their reds at once, and all their orange, etc. 

I kind of mixed mine up so I could do two colors at a time, but I wouldn't try that until you've done an orange plate, just to see how it goes.  :))
