There's a method for getting the colour you want... but it's a bit of a faff, and you need to be around to babysit your garden (and not forget like I keep doing!!). You need two eggs - one the colour that you want to hatch, and the colour below. So for example if I want a violet chick/seahorse, I need a violet egg and an indigo egg.
Once you have the eggs, put out fresh food and wait for one of the eggs to wobble.
If the lower colour egg (e.g. indigo in this example) wobbles, dump the food.
If the violet egg wobbles, let it hatch and it will be a violet chick/seahorse.
It does work, but can be a pain to both get the correct pair of eggs, due to random nature of what colour the EB drops, and also can take a while waiting for the correct egg to wobble. I've been trying to do this with a violet and indigo egg for a week now, and I keep forgetting to freeze my garden when I'm not around. I've now gone through all my nests!
