There are two lists of wildlife; one for those spotted in your garden, and one for those you spot in other gardens.  Make sure you are looking at the right list

What wildlife is not registered as being spotted in other gardens? If you spot in your own garden, then it counts as being attracted in your garden.

You need to earn 150 scrolls to complete level 1 of the Quests.

You also asked about wildlife "not registering their picture".  If you mean the pictures in the Wildlife Guide  those only become coloured in when you have both attracted the wildlife, and spotted it in another garden too.

The "fairy writing" isn't created by the game, but if you go to the forums there is a section for ASCII art where you can find loads of threads full of it that you can copy and paste.  Or if you see a design you like on a garden wall, you can copy that to use.
