If you want to colour the coral you will need the rocks that the rainbow seadragon can plant pondweed then the right colour of guppy will colour the coral.

I haven't yet done the bottom dwellers pond tasks so I aren't absolutely positive but I think you need to spot (at least 1) red guppy to colour your red coral - while the colourless red coral is in your garden. To attract the guppy you need some pondweed growing. Then have a number of frogs(each 5th) to get frogspawn laid. The bottom dwellers then eat that frogspawn.

yes the easter chicks and seahorses are a pain (especially if you want specific colours - other than red  and rainbow). There's a "trick" don't understand how it works(but it does seem to work). If you want a specific colour have 2 eggs in nests, one the wanted colour, and the other the colour before. i.e. Want a blue? have blue and green eggs. If the green egg wobbles discard the food (the chick/seahorse) will NOT be blue. If the blue egg wobbles it WILL be blue.
Wasteful of food(and gold) but the colour wanted is delivered.

Unsure how to get a specific colour egg, seems to be random, although the current time does seem to be part of how game "decides" which colour is given.  Which colour chick/seahorse hatches is similarly "random" but again current time does seem part of the "decision". However only colours "less than" the egg colour are possible red egg gives red chick/seahorse; green egg may give red, orange, yellow, and green; violet egg may give all colours (except rainbow).

as you have completed the chameleons, another alternative would be using a rainbow chameleana flower to attract chameleons (including blues). 
A nice thing about flies and chameleons, like chicks, and seahorses, they do have alerts.
