That is the one I have, but what we have got today is completey different on Mossas. I was supposed to be Watery Seadragon and it now says Rainbow Sea Dragon. I set up my garden with the right shroom and this way i will not be able to attract for another 2 days 12 hours, missing completely out on the SF.  Is this happening to anyone else?

The wildlife needed changes at midnight GMT on Sunday night/Monday morning, so the change happened to everyone. There's a timer in the Dino section of the wildlife guide saying how long you have with "that" critter.

Also, apparently, it also changes at midnight GMT on New Year's Day because it just does, so it will change again on the Wed night/Thu morning for everyone, then it will follow the schedule for the year.

You can also spot wildlife to earn the eggs.
I personally was/am grateful to have completed the Rainbow of Fish challenge, which gives the Rainbow Rocks, which makes any mushroom instantly RFH - necessary for Pondweed Combos and Bottom Dwellers, but extremely helpful for Topiary and situations like this.

I have been doing Dinos since May, so I am well aware that the critters change at midnight on GMT. For me in Spain its 1am, but that is not my concern. I have been following the above mentioned list to attract the critters in order since I started the challenge. I am on Mossas, I have just finished on Sea Lions and according to list I should be on to Watery Sea dragons, this week. I have set up for them ready to start attracting after GMT changeover, just to wake up to see that the order of the critter list has changed and it states that I should attract Rainbow sea dragons. Rainbows need another RFH mushroom, which needs 5 more days to RFH before attracting.  So according to what you say about changing on Nye eve / day it ist worth even attempting to get ready for my assigned critter of the week as it will change again to whatever animal by Thursday.  So technically I wont be able to attract anything or set up for that matter for another 4 days, till after NYE. So the SF we have won for 6 days in my case is useless for the rest of the days as well. 

I have not done ponds before or Topiary so I have none if those perks you mention.

I am the same Andrea in the sense I've not done pond or topiary so do not have the additional perks. There are a lot of frustrated folk today who are doing Dino's. Food wasted throughout the night catching the wrong critter due to the sudden change of everyone's rotation, and this critter count has wasted any counts towards an egg too. Those on the higher Dino's do not have time to plan ahead for the next rotation on Sunday either. And I've wasted dust using to last night to change my piscis colours only to have to change it again this morning 😔

As for it changing again NYE, what a total waste. While I don't like to grumble, two sudden changes in a matter of days is not on!

Needless to say that the free Super Food is useless to us in my case I cant attract anything till after the new year that is relevant to Dino challenge.
