The candied lemon tastes great but I cooked it too long in the simple syrup so it's firmer than I wanted?   But now I know.    It tastes so good though....

I've never made it before so hoping it turns out not completely bitter.  I'm boiling it for the second time before boiling in simple syrup then drying on wax paper overnight and dipping it in sugar tomorrow?   We'll see how it goes.......
