Fiery Ginger Chews
1 cup granulated sugar
½ cup light corn syrup
½ cup water
½ cup unsalted butter
½ cup finely chopped fresh ginger
1 teaspoon ground ginger
½ teaspoon ground cinnamon
¼ teaspoon ground cloves
¼ teaspoon cayenne pepper (adjust to taste for heat)
¼ teaspoon salt
½ teaspoon vanilla extract
Powdered sugar for dusting (optional)
1.Line an 8x8-inch baking dish with parchment paper or lightly grease it.
2.In a medium saucepan over medium heat, combine the granulated sugar, corn syrup, and water. Stir until the sugar is dissolved. Bring the mixture to a boil and cook, without stirring, until it reaches 300°F (150°C) on a candy thermometer.
3.Once the syrup reaches 300°F, remove it from heat. Carefully stir in the butter, chopped fresh ginger, ground ginger, cinnamon, cloves, cayenne pepper, and salt. Mix well.
4.Pour the mixture into the prepared baking dish. Let it cool for about 5 minutes. If you want to dust the top with powdered sugar, sprinkle it over the surface while still warm.
5.Once the candy is set and firm (after about 1-2 hours), remove it from the dish and cut it into small pieces. You can use a knife or kitchen scissors.
6.Wrap each piece in wax paper or cellophane to keep them from sticking together. Store the chews in an airtight container at room temperature.
